This iconic cuvée is a tribute to Dr. Tom himself, made from the original Cabernet Sauvignon and Malbec vines he planted here in the 1960s. The fruit is carefully selected from small portions of his original parcels and harvested by hand before being fermented with wild yeasts. The individual varieties are then aged for 18 months in French oak barrels before the final blend is created.
The bouquet is dominated by intense dark cherries, cassis, and ripe berries, while the first sip reveals a powerful structure, firm tannins, and a solid core of dark fruits. The finish is long and seductive with many notes of crushed wild berries and a hint of toast, spice, and oak from the aging process. A beautiful cuvée to serve with rich red meat dishes or to age for a few more years.
Pairs with: Chateaubriand, festive dishes, anything that promises enjoyment.
